Grilled Smoked Vegetables

  1. Slice the zucchini and squash into 1 inch “steaks”, and the red pepper into 1 inch strips and set aside.
  2. Braising Sauce: In a pan over low heat, combine the remaining ingredients and salt/pepper to taste.  Remove from heat.
  3. Lightly coat the vegetables with the sauce and grill until the desired grill marks are present and the vegetables are slightly tender.
  4. Place the vegetables in a shallow pan, pour any leftover sauce over vegetables and bake covered at 350 degrees in oven for an additional 10-15 minutes.  Serve immediately.
