- Slice the zucchini and squash into 1 inch “steaks”, and the red pepper into 1 inch strips and set aside.
- Braising Sauce: In a pan over low heat, combine the remaining ingredients and salt/pepper to taste. Remove from heat.
- Lightly coat the vegetables with the sauce and grill until the desired grill marks are present and the vegetables are slightly tender.
- Place the vegetables in a shallow pan, pour any leftover sauce over vegetables and bake covered at 350 degrees in oven for an additional 10-15 minutes. Serve immediately.
