*Tomatoes should be deseeded.

  1. Preheat oven to 180ºC.
  2. Heat oil in a large frying pan (medium-high heat). Lower to medium heat so onion doesn’t burn. Add onion. Cook until soft.
  3. Add bacon and cook until almost crisp. (Heat can be turned up to medium-high again).
  4. Add tomatoes. Cook for 1-2minutes more and remove from heat.
  5. Set bacon, tomato, onion mix aside to cool.
  6. Whisk eggs, milk and flour together in a bowl until combined.
  7. Stir in bacon mixture and cheese. Add spices.
  8. Pour mixture into a 24cm ovenproof dish. (Can be lined with baking powder to avoid a mess)
  9. Bake for 50-60 minutes depending on oven. 
  10. Remove from oven and let sit for 10 minutes before cutting and serving. Serve with salad or fries.
