*Tomatoes should be deseeded.
- Preheat oven to 180ºC.
- Heat oil in a large frying pan (medium-high heat). Lower to medium heat so onion doesn’t burn. Add onion. Cook until soft.
- Add bacon and cook until almost crisp. (Heat can be turned up to medium-high again).
- Add tomatoes. Cook for 1-2minutes more and remove from heat.
- Set bacon, tomato, onion mix aside to cool.
- Whisk eggs, milk and flour together in a bowl until combined.
- Stir in bacon mixture and cheese. Add spices.
- Pour mixture into a 24cm ovenproof dish. (Can be lined with baking powder to avoid a mess)
- Bake for 50-60 minutes depending on oven.
- Remove from oven and let sit for 10 minutes before cutting and serving. Serve with salad or fries.
