Peanut Butter Candy Rolls

  • Cook 1st 3 ingredients to 270° over medium heat.
  • In a separate bowl, have ready egg whites (Room Temp) & Vanilla Extract. Pour hot syrup into egg whites VERY slowly, beating constantly. Mixture will increase in size. Add powdered sugar to firm up as needed.
  • Beat for approx. 5 minutes (Mixture will lose shine)
  • Have ready waxed paper, buttered & powdered (sugar), pour mixture onto paper and roll out to approx. 3/16″ thick and cover completely with peanut butter, roll up into a log. Should make 2 or 3 logs. Chill for 2 hrs. Slice rolls into bite-sized pieces.
