This family recipe creates a flavorful, dense noodle. Perfect for linguine, gnocchi, cavatelli (gavadeel), lasagna, and as dumplings.
Whisk together the eggs, salt, water and oil. Combine with flour using one of the following methods:
- Food processor – add all ingredients and pulse until mixture resembles coarse cornmeal. Crumbles should still together when pinched.
- Stand mixer – add all ingredients and beat with dough hook until a ball forms.
- By hand – form a well in center of flour. Add the liquids to well and work flour into liquids. Avoid over-kneading.
If dough is too dry, add 1 TBSP water. If dough is too sticky, add 1 TBSP flour. Once ingredients are combined, place the dough on a floured surface and create 4 balls. Wrap each pasta ball in plastic wrap and let rest for 15-20 minutes before rolling out and cutting noodles.
