This is a favorite and easy to double, triple, quadruple, etc.  The eggs stay moist and light even when held for a while in a crock pot and don’t change color.  This is also the base used for making french toast.  

The egg mix can be made the night before, just be sure to bring to bring the mixture to room temperature before baking.

  • Bring the eggs to room temperature, then thoroughly mix all the ingredients together.
  • Grease a glass casserole dish with butter and add the mixture.
  • Bake, uncovered, for 25- 30 minutes (cover for the last 5-10 minutes).
  • While the eggs are baking, stir every 10 minutes until the eggs are almost set.

This can also be cooked in the microwave at 50% power at 5 minute increments, stirring in between until almost set.  Then cover to keep moist.
